The Best Homemade Popeye’s Chicken Sandwich


Seasoning Mixture

3 tsp paprika 

3 tsp garlic powder 

3 tsp onion powder 

1 tbsp cayenne pepper

2 tsp salt

2 tsp ground black pepper

Marinade Chicken

2 large chicken breast cut in half or 4 boneless chicken thigh

1 1/4 cup buttermilk

3 egg

1/2 tsp salt

Flour Mixture

1 1/4 cup all-purpose flour

3/4 cup corn starch

Spicy Mayo Sauce

3/4 cup mayoinnase

1 tbsp sriracha sauce or 1 tbsp Louisiana hot sauce

1/2 tsp hot taco seasoning or cajun seasoning

1/2 tsp garlic powder 

Bun & Pickles

4 buns

1 tbsp unsalted butter

8-12 pieces pickle slices

oil for frying


Seasoning Mixture

In a small bowl add in garlic powder, onion powder, paprika powder, salt and black pepper whisk together and set aside.

Marinade The Chicken

In cutting board lay the chicken breasts and cover with a of plastic wrap or parchment paper. Pound lightly with the flat side of a meat mallet until the chicken is even in thickness.

Place the chicken to the plate and sprinkle 2 tbsp of the seasoning mixture and coat each chicken side evenly. Keep the rest of the seasoning mixture for later.

In a container or large mixing bowl add eggs, buttermilk and salt. Add the chickens and stir little but not over mixing. Cover with plastic wrap.

For the best result marinade in a fridge for at least 30 minutes to 1 hours or overnight (tip : If you chill the chicken for over night let the chicken sit in the room temperature for at least 20 minutes before cooking).

Flour Mixture

Combine flour, cornstarch, remaining seasoning mixture in a large resealable plastic storage bag or mixing bowl. Drizzle 1 tbsp of liquid marinade to the flour mixture. Shake it well then add chicken to bag one pieces at a time, close, and shake to coat the chicken. Give another dip to the liquid marinade and again shake it and gently toss the chicken around the flour and press the chicken to build up bumpy texture.

Remove the chicken one a time from marinade mixture and letting the excess drip off.

Place the chicken into the plate and let the chicken sit for 1-2 minute to make sure the flour is sticks.

Spicy Mayo Sauce

In small bowl whisk together mayonnaise, Sriracha sauce, taco seasoning and garlic powder.

Cover with plastic and set aside or chill in the fridge.

Frying Chicken

Preheat oil into a heavy duty pot or deep fryer to 350 degrees F. Make sure the oil cover the chicken.

Fry chicken a few pieces at a time. Turn chicken to brown evenly and remove when golden about 8-10 minutes or until cooked through. Drain on wire rack to keep chicken crispy.

Make The Sandwich

In sauce pan or skillet, once hot, add the butter and place both sides of the buns face down into the buttered surface. Toast until edges of the buns are buttery crisp.

Add spicy mayo to both sides of the buns. Add 2-3 pickle slices to bottom bun, add chicken and place top bun. Enjoy ! perfect serve with french fries.
