Whole30 Turkey “Noodle” Soup


Two 12-ounce bags Natural Heaven Angel Hair Pasta

1½  tablespoons extra virgin olive oil

1¼ pounds Whole30 compatible Italian sausage, turkey or pork, formed into .5 ounce meatballs (to make your own Whole30 compatible Italian sausage, see below)

2 cups sliced carrots

1 cup chopped onion

1 cup sliced celery

½ teaspoon kosher salt, plus more to taste

2 tablespoons diced garlic

2 cups green beans cut into 1 inch pieces

8 cups chicken stock, warmed

1 teaspoon dried basil

1 teaspoon dried oregano

1 tablespoon tomato paste

2 cups crushed tomatoes

Homemade Whole30 Compatible Italian Sausage (if you aren’t using store bought)

1 pound ground pork

½ teaspoon dried basil

½ teaspoon dried oregano

1 teaspoon dried whole fennel

¼ teaspoon kosher salt


If you are making your own Italian Sausage: In a large bowl, combine all ingredients and mix well.

Place the Natural Heaven pasta in a colander and rinse well with cold water for about 1 minute. Set aside.

In a large Dutch oven or stock pot over medium heat, heat the olive oil. Cooking in batches if needed, place the meatballs in the pan in a single layer if possible and cook until browned and crispy, about 6-10 minutes total. As the meatballs finish cooking, transfer to a large bowl.

In the same pot, add the carrots, onions, celery, and ½ teaspoon salt and, stirring occasionally, sauté until soft, about 3 minutes. Add the garlic, stir to combine, and cook for 1 minute. Increase the heat to high, add the green beans, chicken stock, basil, and oregano, and stir to bring to a boil. Reduce the heat to a simmer and continue to cook for about 5 minutes, or until the green beans are crunchy, but not overcooked. Add the tomato paste and the crushed tomatoes, and stirring to combine, bring to a boil. Return the noodles and meatballs to the pan, stir to combine and serve. Enjoy
