Steak and cheese empanadas


Ingredients

canola oil to fry
1/2 lb. shaved steak
1 small onion, diced
1/4 cup bell pepper, diced (I used yellow)
1/2 cup shredded cheese of your choice (I used a Mexican blend)
1 tbls. hot pepper relish (Use more or less to suit your taste)
5 frozen empanada dough discs, thawed
water

How to make it

Preheat oven to 200
In skillet, add oil and turn heat to medium
Add pepper and onion and saute until crisp tender
Add pepper relish and steak
Cook until meat no longer pink
Remove from heat and cool
Add cheese and mix to combine
Add meat mixture to middle of dough discs
Add water to rim of disc
Fold in half and seal with a fork
In Dutch oven, pour oil up 3-4 inches
Add thermometer and turn heat to high
When oil reaches 350 add empanadas in batches
Fry until golden brown, about 2-3 minutes and then flip and fry other side
Remove to baking rack and put in oven to keep hot while cooking remaining enpanadas
I added extra pepper relish to mayo for a dipping sauce
