Polish Apple Pancake

Ingredients:
2 cups all-purpose flour
1 medium egg
2-3 tbsp. sugar
2 tbsp. baking powder
1 ½ cup milk
1 large apple
Vegetable oil (frying)
Powdered sugar (topping)

1:
Peel the apple, and cut into thin slices. Set aside.
2:
In a mixing bowl, combine the egg and sugar. Whisk until fluffy.
3:
Add to the egg and sugar mixture the flour, milk, and baking powder. Mix well.
4:
Add the slices apples and combine with the dough mixture.
5:
Heat up the frying pan with the vegetable oil on high heat (make sure the oil is hot before placing the batter). Add in a spoon full of your apple batter (lower the heat) as if your making pancakes. You will notice the sides slightly browning, flip.
6:
Top your “racuchy” with powdered sugar.

ENJOY!
