So, (I really hate when a person starts out a sentence with the word "So". What's up with that? ) This past Easter, we had tons of leftover kielbasa. I decided to make up a spaghetti sauce with it. Maybe add a bit of cabbage and make it sort of Polish. It turned out great. As our family motto goes: Try new things.This was a new thing, indeed.

Ingredients
1/3-1/2 pound cooked fresh kielbasa, diced
1/3 1/2 pound cooked smoked kielbasa, diced
1/4 head red cabbage, finely chopped
1 onion, chopped
1/2 pound mushrooms, finely chopped
1/2 green pepper, chopped
1 large can/jar chopped tomatoes
1 small can tomato sauce
1/2 c dry white wine
1/2 c dry red wine
1 pound pasta, cooked
black pepper to taste
garlic powder to taste
1 c Parmesan or Romano cheese, grated

Directions

In a large frying pan, aute the onions for a few minutes. Then add mushrooms and cook until they start to brown. Add cabbage and cook for a few minutes. Add green pepper, and the rest of the ingredients. Stir and cook covered until cooked through and thick. Meanwhile, cook spaghetti. Coat with olive oil and set aside until ready to serve. Serve sauce over pasta with Parmesan or Romano cheese.
