Polish Apple Cake (Szarlotka)



* Crust
4 Egg Yolks
2 Sticks of unsalted butter
4 Tablespoons sour cream
1/2 cup sugar in the raw OR whatever sweetener you would like to use. Raw coconut sugar works great too!
1/2 cup confectioner's sugar
2 tsp baking powder
3 cups of organic unbleached flour (You may need to add a bit more if your dough is too wet)
*Make sure you sift the flour as you are using it
1 packet of vanilla sugar


* Filling 
 2lbs of apples (about 9 apples) golden delicious, macintosh, or gala
Sugar in the raw to taste
1 tsp of cinnamon
Juice from one lemon
Panko breadcrumbs

Method * 

Prepare the dough on a pastry board

Using a knife mix room temperature butter with sugar and vanilla sugar (on the pastry board)

Add 1 and 1/2 cup of flour to the pastry board and fold the butter and sugar with the flour

In a bowl mix 4 yolks, sour cream, and baking powder

When the baking powder starts to raise the yolks that are in the bowl, pour this mixture onto the pastry board and once again fold this mixture with a knife. You can also use your hands at this point and add flour until your dough reaches an elastic consistency. You do not want your dough to be hard or sticky. You will usually use about 3 cups of flour but it depends on the size of the egg yolks you have used.

Put your ball of dough in the fridge for 30 minutes.

Preheat your oven to 350 F

Now you can wash/peel your apples, and use the large holes on a grater to grate your apples.
Add lemon juice to the grated apples

Remove your dough from the fridge, split it into two equal pieces, and use a roll pin to flatten the first half of the dough.

Grease your baking pan with butter or any baking spray (I used a 14x10 inch pan)

Lay your first layer of flattened dough on this baking sheet

Sprinkle some Panko breadcrumbs on the dough

Before you lay your apples down squeeze some juice out of them so the cake won't be soggy.

Lay the grated apples down on the dough and once again sprinkle some panko breadcrumbs on top.

You can now place the top layer of the cake on top of the apples. You can either roll it out flat just like the bottom layer, or you can put the second half of the dough in the freezer for 15 minutes and then grate the dough on top of the apple filling.

* I went with option two and grated the dough but it will taste great either way!

You can even get creative and make shapes out of the dough and then place it on top.

Bake at 350 F for 1 hour or until the top is golden brown
Let the cake cool before you slice into it

Before serving you can add powdered sugar/vanilla sugar on top (as I always do)
